RANCH HAND BREAKFAST BAKE

Ingredients
8 large eggs
1 cup mayonnaise
1 medium onion chopped and sautéed
2 cups Cheddar cheese grated
2 medium russet potatoes, peeled and grated
3/4 lb sausage ITALIAN (or bacon)
2 cups Tomato slices (for top)
1/4 cup Parmesan cheese
2 teaspoons each dried basil and Italian seasoning
1/2 teaspoon each salt and pepper

Preheat oven to 350.

In large bowl whisk eggs, add the rest of the ingredients except for tomatoes and parmesan. Mix well and pour into 9x13 greased baking sheet. Top with tomatoes and parmesan.
