Personal Baked Oatmeal Cups

Another easy to make and easy to use idea. Kids love these and when you let them help they love them even more. Bring your kids in your kitchen, let them experiment and use with their imagination.
A fun a healthy snack.









PERSONAL BAKED OATMEAL CUPS

Ingredients:
2 eggs
2 cups applesauce, unsweetened
5 cups Old Fashioned rolled oats
1 banana, mashed
2 3/4 cups milk
1 1/2 teaspoon sugar
1 tablespoon cinnamon
3 teaspoons baking powder
1 teaspoon vanilla
1 teaspoon salt
Optional topping: raisins, walnuts, chocolate chips, granola, fresh or frozen fruit


Directions:Preheat oven to 350 degrees
Mix eggs, vanilla, applesauce, banana and sugar together in a bowl.
Add oats, salt, baking powder and cinnamon and mix well with egg/applesauce mixture.
Add milk and stir to combine.

Spray a 12 and 6 capacity muffin tin with cooking spray or use paper cupcake liners (also spray liners for easy removal)
Pour mixture evenly into muffin tin cups.

If you are using toppings add them onto the tops of themuffins now. If you are going to use fresh or frozen fruit, drop it right into the batter.

Bake 30 minutes or until a toothpick in the center comes out clean.
Cool slightly and enjoy, or freeze in gallon size freezer bags and defrost and microwave when ready to eat.
