Home Alone Chicken Taco's

Because my husband travels for his job now, I find myself not wanting to cook much when its just me at home. So I try to make things I can do ahead of time. All the prep for Taco's can be done the day or night before and I just throw them together when I get hungry. An easy dinner for a party of one, right down to the paper plate so there are no dishes to do either.

HOME ALONE CHICKEN TACO'S

Ingredients:
Boneless skinless chicken breast
Taco Sauce (I use La Victoria Red Taco Sauce)
Refried Beans
Cheddar Cheese
Fresh Cilantro
Lettuce or green cabbage
Salsa
Tortillas (I use Tortilla Factory w/chipotle or green chili)

Directions:
I am pretty sure you all know how to make a taco. The filling is up to you, use what you have and what you like. In the summer months I love to use lots of fresh herbs, cilantro, basil, parsley.

Cut the chicken in small chunks, cook it in a bit of olive oil to get a nice golden brown sear on it. Then add the red taco sauce and let that cook in for flavor. Use the sauce of your choice, if you want, use a nice salsa for a mellow flavor, or kick it up a notch with your favorite hot sauce.

Prep all your fillings the day before, store them in containers for easy use and easy clean up.
