Marinated Cheese Appetizer



Change up the cheese in the recipe and use what you like. The is the perfect recipe to make your own way. Just remember the appearance when choosing the cheeses, you want contrasting colors in the layers. Be bold add basil leaves or other herbs to kick up the flavor.







MARINATED CHEESE APPETIZER

Ingredients
1 cup olive oil
1 cup red wine vinegar
1/2 cup sugar (to more to taste); use your judgment
1 small jar pimientos
little fresh parsley
1 - 2 teaspoon chopped garlic
1 block colby jack cheese (or your choice of cheese such as cheddar, smoked gouda)
2 packages cream cheese, 8 oz. each

Directions
Marinade: olive oil, red wine vinegar, sugar, pimientos, fresh parsley, chopped garlic; mix all ingredients well.
Place cream cheese in freezer about 20 minutes to chill. Cut the Colby Jack Cheese and Cream Cheese in half lengthwise. Slice about 1/8" thick. Layer in logs alternating Colby Jack and Cream Cheese. Pour 3/4 marinade over the cheese. Chill overnight. Pour remaining marinade over cheeses just before serving.
