VEGAN PASTA ALFREDO
This sauce is made in a blender, so its fast and easy. It's also super easy to customize any additions you choose.
serves 2
Ingredients:
1 Cup Soy milk
1/3 Cup Raw, Unsalted Cashews
1/4 Cup Nutritional Yeast
3 Tbs Low-Sodium Soy Sauce
2 Tbs Earth Balance Margarine
1 Tbs Tahini (you can find this at just about any store now days)
1 Tbs Fresh Lemon Juice
2 tsp Dijon Mustard
1/2 tsp Paprika (smoked paprika is best)
1/3 Cup Raw, Unsalted Cashews
1/4 Cup Nutritional Yeast
3 Tbs Low-Sodium Soy Sauce
2 Tbs Earth Balance Margarine
1 Tbs Tahini (you can find this at just about any store now days)
1 Tbs Fresh Lemon Juice
2 tsp Dijon Mustard
1/2 tsp Paprika (smoked paprika is best)
1 Pinch Nutmeg
2-4 Cloves of Garlic, optional
Black pepper, to taste

1 cup dry Orecchiette pasta - cooked according to package directions (or any pasta you choose)
Directions:
Add all the ingredients to a blender and blend until smooth. This works best in a high-speed blender (like a Vita-Mix), but you can make it in a regular blender. Blend it a bit longer, or perhaps strain it if you want it perfectly smooth.
