Honey Ginger Glazed Salmon

HONEY GINGER GLAZED SALMON
Ingredients:
3 tablespoons honey
3 tablespoons dry sherry
3 tablespoons soy sauce
2 tablespoons fresh lime juice
1 tablespoon grated ginger root
1 tablespoon Dijon mustard
4 (6-ounce) salmon fillets (about 1 inch thick)

Directions:

Marinate salmon: In a shallow dish, combine honey, sherry, soy sauce, lime juice ginger root and mustard. Mix well. Place salmon in a single layer in dish, turn to coat all sides. Marinate covered about 20 to 30 minutes turning from time to time.

Heat broiler or grill, coat pan or rack with cooking spray, arrange salmon make sure sides are not toughing. Cook 4 inches from flame until salmon is cooked to desired doneness.Use a wide spatula to carefully turn half way through cooking.  8 to 10 minutes.

Serve with rice or your choice of fresh veggies.
