IRISH CAR BOMB CUPCAKES
Ingredients:
1 cup Guinness
beer1/4 lb plus 1 tablespoon butter cut into 1" pieces
2 cups brown sugar - (packed)
3/4 cup sour cream
2 large egg
2 cups all-purpose flour
2 1/2 Tbs baking soda
3/4 cup unsweetened cocoa
1 tsp vanilla
FROSTING
1/4 lb
butter, softened
3 cups
powdered sugar1 tsp Bailey’s Irish Cream
1 tsp Jameson's Irish Whiskey
Directions:
1. Preheat oven to 350 degrees and line a muffin tin with cupcake liners.
2. Combine the Guinness and butter (chopped into one-inch chunks) in a large saucepan and heat to melt butter. Remove from heat and whisk in the cocoa and sugar. In a bowl, whisk the sour cream, eggs, and vanilla, then add to the Guinness mixture. Sift together the flour and baking soda, and fold into Guinness batter.
3. Pour into muffin tins and bake for 25 minutes or until inserted toothpick comes out clean. Let stand for 10 minutes, remove from muffin tins and cool completely on a rack.
FROSTING
1. Melt butter, mix with powder sugar, Add Bailey's and Jameson's, mix well and frost cooled cupcakes.
