Ingredients:
2/3 cup butter
2 cups granulated sugar
2 eggs
1 teaspoon vanilla
1/2 cup milk
3 cups flour
1 teaspoon baking powder
Granny Smith Apples, peeled, cored, and cut into wedges (or chopped into chunks) and tossed in a mixture of 2 Tablespoon Sugar and 1 Tablespoon Cinnamon
Directions:
Beat butter and sugar with mixer until creamy, beat in eggs one at a time.
Add vanilla and milk; then flour and baking powder.
Whisk to a smooth paste. If you want to chop up the apples rather than use wedges you can do so and add to batter at this point. Gently fold chunks into batter.
Fill muffin cups to about 2/3 full with batter.
Add the apple pieces, press lightly into batter.
Bake at 350 for about 15 - 20 minutes or until muffin springs back in center.
